This is by far my favorite salad to date. I just didn’t know it until …. last week. Mike helps out on a farm a little down yonder and through the woods every once in awhile, and the other day he brought home fresh figs. Have you ever had a fig?

No, no. Not a Fig Newton. It’s ok. I said the same thing.

I was pleasantly surprised how sweet and delicious they were! Holy toledo I fell in love in two seconds!

    fresh fig and arugula salad

So, of course, I HAD to find a recipe to use these beauties in, but I kept running into recipes with ingredients I have never heard of.

Screw it, I thought. I’m going to make my own!

Fresh Fig and Arugula Salad with a Honey and Balsamic Dressing

    Ingredients

    • arugula and spinach mix
    • fresh mozzarella
    • 6 fresh figs (cut in quarters)
    • dried cranberries
    • sunflower seeds

    Dressing

    • extra virgin olive oil
    • balsamic vinegar
    • honey

    Steps

1.) Combine all of your ingredients onto your plate, and cut into whatever size increments that you prefer.

2.) If you would like to pre-mix your dressing you are more than welcome to, but I just did a few rounds of each item around my salad.

    3.) Enjoy!
