Hi everyone! I do hope your week is going absolutely amazing so far :)
I am really, really excited about sharing this recipe with you today for a few different reasons.
One, because I have teamed up with Wayfair for their Ultimate Halloween Party, and there is going to be an amazing amount of Halloween inspiration that you will not want to miss! Two, because I rarely like to cook, and three, because this bacon and black bean dip was scarfed down so quickly by my family I almost had to make another batch because I wanted more! It’s really that yummy.
Plus, it’s so customizable. For instance, I don’t like onions, but a lot of bean dips call for salsa. So, I omitted the salsa and used a can of diced tomatoes and green chiles instead. Just trust me. Test it out. It’s amazing!
Festive Bacon and Black Bean Dip Recipe
- 3 slices of bacon (or more if you really, really like it ;)
- 1 can of refried beans
- 1 can of diced tomatoes and green chiles
- 1 can of sweet corn
- 1 can of black beans
- 1 cup of fiesta cheese blend
- sour cream (if you’d like!)
- blue corn chips
1. Preheat your oven to 350 degrees.
2. Cook your bacon and let it drain on a few paper towels.
3. Mix all of your ingredients together in a bowl (except for your cheese, sour cream, and chips), and spread evenly into a 8-inch square casserole dish.
4. Add the cheese to the top and then put in your oven until the cheese is all yummy and melty!
5. Then, serve warm with chips!
You can definitely leave your dip in your casserole dish if you’d like, but I thought adding it to a pumpkin would be a fun idea for Halloween.
Tip: If you don’t want to put your dip directly into your pumpkin you can always put a cup or bowl into the pumpkin, and then add your dip into it.
