Sweet and Tasty Homemade Cookie Ice Cream Sandwiches

This homemade ice cream sandwiches recipe is absolutely delicious! Not to mention, it’s so easy too. Perfect for a family gathering or a sweet treat!

I am here this week to share with you my quick and easy version of ice cream sandwiches! The possible combinations are endless and that is what I love about this dessert; everyone can make their own version. I decided to use the “break and bake” cookies because it made my life that much easier. 🙂 You can also see below that there are four different kinds of ice cream … by the end, I ended up using five.

So, what do you need to get started? Ice cream, cookies, and any sort of chocolate or peanut butter chips you might like.

Do you see how my cookies are different sizes? I began by just using one section of the break apart cookies (rolling the dough into a ball) and this gave me the smaller cookies. Then I decided I wanted some much larger ice cream sandwiches, so I used two sections and rolled them together into one bigger ball of dough. Can you make cookies out of a package? Of course! Can you make cookies from scratch? Go for it! It’s your kitchen after all 😉

I chose to keep it simple and use sugar cookies and German chocolate cookies.

This combination is Cherry Garcia ice cream with German chocolate cookies. Do you see how much ice cream I scooped onto the cookie? Yea, that’s a little too much. It ended up squeezing out past the sides of the cookies. Absolutely delicious, but not a perfect looking ice cream sandwich!

Here we have chocolate chip cookie dough ice cream with sugar cookies. The second is vanilla ice cream, German chocolate cookies, and miniature chocolate chips. Aren’t the chips so cute?! I love everything miniature!

When rolling your ice cream sandwich into any sort of topping/candy/chocolate chips, the ice cream needs to be pretty solid. As you can see below, the chocolate ice cream is melting everywhere!! This particular ice cream sandwich did not make the “final picture cut”, but it was still enjoyed!

Ok, I am going to be real with you all just like I always am and let you know that these ice cream sandwiches are actually very easy! But, I am going to give you some tips!

Lessons Learned:

Lesson #1: Make sure the ice cream is a little soft so you can squish it together between the cookies, but hard enough to roll into miniature pieces of chocolate goodness (sounds easy, right?!)

Lesson #2: Never use chocolate ice cream. Just don’t do it. It will drive you mad. It melts way too fast and then doesn’t want to refreeze in a timely manner … just save yourself the torture. I may be a little dramatic about this one, but I’m just sharing my feelings! 🙂

Lesson #3: Those cute miniature chocolate morsels seem to fall on the floor … a lot. And then once you step on them, be sure to wipe your feet off before walking on your carpet. Just sayin.

Lesson #4: Freezing overnight is really best for keeping the sandwich together.
